You'll need: 

  • 1 whole cauliflower (with leaves intact)
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 500ml whole milk
  • 2tbsp mustard
  • 200g Glastonbury Twanger Cheddar, grated
  • Salt and pepper to taste
  • Olive oil for roasting

Directions

Preheat your oven to 200°C (400°F). Remove the cauliflower leaves and set them aside. Cut the cauliflower into florets and halve any large pieces for even roasting. Toss the cauliflower florets and leaves in olive oil, salt, and pepper. Spread them out on a large baking tray in a single layer.

Roast the cauliflower florets and leaves for 20-25 minutes until they begin to char. Once roasted, remove from the oven and set aside.

In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously to form a roux. Cook for 1-2 minutes, ensuring the roux doesn’t brown.

Gradually add the milk, whisking constantly to avoid lumps. Continue whisking until the sauce thickens and becomes smooth, about 5-7 minutes.

Stir in the mustard and grated Glastonbury Twanger Cheddar and season with salt and pepper to taste. Let the cheese melt fully into the sauce, then remove from heat.

Transfer the roasted cauliflower and leaves to a baking dish. Pour the cheese sauce over the cauliflower ensuring everything is coated.

7.

Place the dish into the oven for 35-40 minutes until the top begins to brown and bubble. Once browned, remove from the oven and let it cool slightly before serving.
