You'll need:
  1. 1x pork T-Bone
  2. Salt 
  3. Olive oil
  4. 2tbsp Butter
  5. 1/2 garlic bulb
  6. 1tsp fennel seeds
  7. 4x anchovy fillets
  8. 1tbsp red wine vinegar
  9. 1 pinch of semi fresh sage
  10. 1 pinch of semi fresh coriander

Directions

Remove your pork from the fridge 30 minutes before cooking. Season it heavily on both sides and remove the rind.

Heat up a pan till it’s ripping hot. Add olive oil then lay your pork steak into the pan. Cook for 1-1.5 minutes on one side, then flip. Add butter, garlic and fennel seeds and let it all melt together. Cook on the other side for a further 1-1.5 minutes whilst basting. Remove from the pan and leave to rest.

Meanwhile, add anchovy fillets to the hot pan and fry until they’ve dissolved into the oil. Add red wine vinegar and mix together for 30 seconds, remove from the heat and add your semi fresh herbs.

Slice your steak, (if its pinkish in the middle, you’ve cooked it perfectly) then pour over the dressing and enjoy.
