Fried Calamari
Fresh calamari, lightly battered, flash-fried to perfection. Crispy golden exterior, tender squid inside. A squeeze of lemon, a sprinkle of sea salt - simple, honest flavors. Don't settle for frozen rings, get the real deal. This is seafood heaven.
You'll need:
- 1 whole squid, cleaned
- 250ml milk
- 2 teaspoon salt
- 1tbsp smoked paprika
- 1tbsp oregano
- 1tbsp garlic powder
- 200g plain flour
- 120g corn flour
- 1 litre Vegetable oil for frying
- Fresh parsley, chopped
- 1 lemon cut into wedges

Start by cutting up the squid into 1.5cm rings but leave the tentacles as they are. Place the squid in the milk along with half of the seasonings. Cover and refrigerate for 2+ hours.
In a bowl, mix the flour, corn starch and the remaining seasonings. Dredge the squid in the flour. Meanwhile heat up a heavy bottomed pan of vegetable oil until it reaches around 200C. Fry off the squid in small batches until golden and crispy (around 2– 2 ½ minutes).
Transfer the calamari to a plate lined with kitchen towel, removing any excess oil. Immediately season with salt and pepper.
Place the calamari in a bowl. Sprinkle with fresh parsley and a squeeze of lemon. Enjoy!
