Honey & Soy Glazed Chicken Skewers
- 2x free range chicken thighs, boned
- 2x spring onions
- 1tbsp honey
- 1tbsp soy sauce
- 1tbsp sweet chilli sauce
- 1tbsp hoisin sauce
- 1tbsp sesame oil
- 2 garlic cloves
- 1 thumb, ginger
- 1tsp nigella seeds
- 1tsp sesame seeds

De-bone your chicken thighs, then dice them into bite size pieces. Chop your spring onions into 1.5 inch strips. Set aside.
In a bowl, add your honey, soy sauce, sweet chilli sauce, hoisin and sesame oil. Grate in your garlic cloves and ginger. Mix well, then add your chicken. Mix again until fully coated, cover, then leave to marinade for at least 2 hours or overnight.
Thread the chicken onto skewers along with the pieces of spring onion. Place on a baking tray, then brush over any remaining marinade. Preheat your oven to 200C. Place the tray in the oven for roughly 20 minutes, turning the skewers halfway through. Once brown and sticky, remove from the oven and leave to rest for 5 minutes.
Sprinkle over nigella and sesame seeds and serve with white rice and some greens. Enjoy
