 You'll need:

  1. 500g pork mince
  2. 100g feta, crumbled
  3. 100g breadcrumbs
  4. 3 garlic cloves
  5. 1/2 a red onion, finely chopped
  6. 1 heaped tbsp mustard
  7. 1tbsp semi-dried oregano
  8. 1tbsp semi-dried rosemary
  9. 1tbsp smoked paprika
  10. 1 egg
  11. Salt & Pepper
  12. Olive oil

In a large mixing bowl, combine the mince, feta, breadcrumbs, garlic, red onion, mustard, herbs, paprika, egg, and a generous pinch of salt. Start by gently mixing the ingredients with a wooden spoon until they are just combined. Then, use your hands to thoroughly but lightly mix everything together. Be careful not to over-mix, as this can make the meatballs dense.

Wet your hands, then mould your pork mix into golf sized meatballs. Set aside.

Bring a pan up to a high heat and add a drizzle of olive oil. Place your meatballs in and cook on one side for 1.5 minutes before flipping. Once you have developed a crust on both sides, bring the temperature down to a low/medium and cook for a further 5-6 minutes or until cooked through.

Remove the meatballs from the pan and let rest for 2 minutes before serving.

Enjoy with a garlicky yoghurt, greek salad and some toasted pitta.
