You'll need:

  • 1x chicken carcass
  • 2 onions, chopped
  • 2 carrots, chopped
  • 1 bulb garlic, halved
  • 10g fresh thyme
  • 10g fresh rosemary
  • 10g fresh parsley
  • 3 bay leaves
  • 1 star anise (optional)

Directions

Add all of your ingredients to a large stock pot and fill with cold water until everything is submerged (roughly 3 litres of water).

Bring the water up to a low boil before turning the heat down to low. This should be on a light simmer. Leave for 3 hours, checking every half an hour for any scum that surfaces. Simply use a spoon to remove the foam.

3.

Once it's finished, strain the liquid through a sieve into separate pots. Cool the stock right down before placing it in the fridge or freezer, depending on when you intend on using it.
