The hot smoked salmon is kiln-smoked for 12 hours, then glazed with Highland heather and honey. A quick 18-minute roast in the oven brings out rich, flaky layers and a sweet-smoky finish.
The cold smoked salmon is traditionally cured with coarse sea salt and gently smoked to preserve its silky texture and clean, smoky profile.
