With acidity adding flavour and sweetness to almost dish, we needed to find a red wine vinegar that provided the full punch of the ingredient. To do so, we had to venture to France - specifically to Edmond Fallot and their incredible white and red wine vinegars. One of my favourite winter uses is to roast the Foskett's carrots in honey, salt and red wine vinegar. Pairs beautifully with Fallot's Dijon and Tarragon Mustard.
