Let’s start with the Spider Crab - the sea's misunderstood legend. Yes, it looks like an alien and yes, it’s a bit of a nightmare to pick by hand. But it also happens to be sweeter than brown crab and (surprise!) it’s an invasive species around the UK coastline. So, really, we should be eating more of it. Thankfully, Pete and his team over in Jersey have turned the chaos into an art form - hand-picking and packing the meat within an hour of the crabs landing.
Then there’s the brown crab meat. So rich, so full of flavour, so criminally underrated. The leg meat might get all the glory, but this is the real umami bomb. Fold it into linguine, level up a risotto, or mix it through mayo for an outrageous sandwich filler. It’s crab meat that does the heavy lifting.
