Rack of lamb, often considered the crown jewel of lamb cuts, is a popular choice for special occasions. Its tender meat and rich flavour make it a crowd-pleaser.
We've kept our racks chin-in, whole and untrimmed - leaving the meat and fat between the rib bones to render down into the sauce and basting liquid. If you prefer a more fine-dining appearance, cut away the meat between the bones before beginning to cook for a "French-trimmed" appearance.
Some tips from the Herd Kitchen:
- Allow the lamb to reach room temperature before cooking for even cooking.
- Sear the fat side of the rack in a hot pan to create a flavourful crust, before finishing in the oven.
- Don't be shy with salt and pepper; these will enhance the lamb's natural flavour.
- Pair the lamb with light sauces and sides like simple roast or steamed veggies.
