Not your average pork cut - though it probably wishes it was, just to get a bit of peace. Pluma is taken from the shoulder end of the loin, where the marbling does most of the heavy lifting, which makes it naturally juicy with a good balance of fat. Dry aged for 20 days, it’s tender, full of flavour, and quite frankly showing off a bit.

You don’t see it everywhere, and that’s part of the appeal. It’s a favourite among those who know their way around a butcher’s counter; understated, but quietly excellent.
