You'll need:
- Olive oil
- 1/2 onion
- 4 garlic cloves
- 300g vine tomatoes
- Salt
- 1x tinned San Marzano tomatoes
- 1x pinch semi dried basil
- 1x pinch semi dried Italian herbs
- 20g grated English pecorino
- 250g pasta

In an oven proof pan, add a glug of olive oil, then your roughly chopped onions. Fry over a medium heat until translucent, then add your whole peeled garlic and tomatoes. Fry until the tomatoes begin to blister, then season with salt and place into an 180C oven for 25 minutes.
Once roasted, add to a blender along with the San Marzano tomatoes, 20g pecorino and a generous pinch of semi dried basil. Blend till smooth.
Boil your pasta in heavily salted water till al dente. Save a mug of pasta water. Mix your pasta in a pan with the blended sauce over a medium heat for 1-2 minutes, adding pasta water to loosen it up, then serve it up with a generous grating of Pecorino.
