You'll need: 

  • 2x rump steak
  • 1/2 tbsp Za’atar Seasoning
  • 1/2 tbsp Baharat Seasoning
  • 1 pinch semi-dried parsley
  • 1 pinch semi-dried coriander
  • 1 pinch semi-dried dill
  • 1/2tbsp salt
  • Olive oil
  • Rose Harrisa
  • 4x flatbreads
  • Pickled red onions
  • Fresh Coriander

Remove your steaks from the fridge half an hour before cooking. Mix your spices, semi fresh herbs and salt together, then sprinkle over the steaks.

Place a griddle pan over a high heat, add olive oil, then add your steaks. Fry for 1.5 minutes on one side before flipping and frying for a further 1.5 minutes. Flip again, frying for a further 30 seconds before flipping one last time and finishing for a further 30 seconds. Remove and let rest for 2.5 minutes.

Toast your flatbreads, add a large dollop of rose harissa to each one, then slice up your rump steaks. Place slices of steak over, then your pickled red onion and fresh coriander. Optionally add some fresh yoghurt and enjoy.
