Honey roasted ham is a simple, tasty Christmas dish that anyone can pull off. This is the base recipe, but I like to mix things up by checking my cupboard for extra flavors to add to the simmering liquid. My personal favorite is star anise, cardamom pods, and fennel seeds, but cloves, cinnamon sticks, or any other Christmas spices work great too.

You'll need:

  • 1x 2-3kg ham
  • 1x onion
  • 3x carrots
  • 1x leek
  • 1.5 tbsp honey
  • 1.5 tbsp mustard

Directions

1. Remove the ham from the packaging and place in a large pot. Fill it up with water (don’t worry if it doesn’t fully cover the ham. We can turn it halfway through cooking).

2. Roughly chop your onion, carrots and leek, place them in the pot with some optional spices, then bring to a light simmer. Simmer for 20 minutes per 500g, then remove from the ham. (You can keep the liquid as stock for gravy).

3. Preheat your oven to 180C. In a bowl, mix together your honey, mustard and olive oil. Remove the skin of the ham, careful not to remove the layer of fat. Score the fat, brush half the glaze over and place in the oven for 10 minutes. Take the ham out, brush with the remaining glaze, then place back in the oven until caramelised and sticky.

4. Leave to rest for 30 minutes under foil, then slice up into thick portions. Enjoy with some roasted or mash potato, caramelised onions and peas. And make sure you save the leftovers for the most amazing sandwiches.
