15 minute Greek Sardines
I wish I was on a greek island right now, but the next best thing is to make food like this. Food that transports you on holiday. This is one of the greatest Mediterranean starters, second only to crusty bread and tzatziki.
You'll need:
- 300g butterflied sardines
- 3tbsp olive oil
- Juice of 1/2 a lemon (+ its zest)
- 1 large pinch of semi-fresh oregano
- 2 garlic cloves, minced
- Salt & Pepper

In a roasting tray, add the sardines. Drizzle the tray with olive oil and squeeze in the lemon. Add the lemon zest, garlic, oregano and then season the sardines with salt & pepper. Mix this all together well,, then lay the sardines skin side up.
Preheat an oven to its highest heat. Place the sardines in the top shelf of the oven and roast for 5-6 minutes when the sardines have become nice and crispy.
